Enchiladas and eggs

My Grandma JoJo made me a batch of enchiladas recently... These were probably the first enchiladas I've had from grandma in 5 or 6 years. A nice surprise.

And Grandma's still got it. to this day she makes the best enchiladas I've ever had.

Years ago -- I think I was still in college -- I did a video of grandma showing me how to make them. I need to find that videotape!

Pictured here, perhaps the best way to have enchiladas... With over easy eggs. Awesome!
